Today, in contrast to the Traditional Turkish breakfast, we are going to share our very simple but very nutritious dish as a option of breakfast to you. It is Green beans with eggs dish, also it is called fine beans and eggs sauté or Green beans with scrambled eggs by the people. In Turkish we call it: "Yumurtalı Taze Fasulye Kavurması". How to Make Turkish Style Green Beans with Eggs (Yumurtalı Taze Fasulye Kavurması)?

Because, our mothers and our grandmothers used to make it, it is such a special food for breakfast, but if you want, you can cook this meal for lunch or dinner too. Clean and Trim Fresh Green Beans |
Add ground meat and sautéd |
Chopped onion and green pepper make dish delicious |

First of all try to buy fresh green beans for this meal. Also you can use frozen, dried or canned beans, but fresh green beans are always better. This meal's ingredients are very simple and it is so nutritious meal.

Here it is our Turkish Style Green Beans with Eggs (Yumurtalı Taze Fasulye Kavurması) Dish's recipe;
Serve: 4 - 6 servings, Preparation Time: 10-15 minutes, Cooking Time: 30 minutes, Cuisine: Mediterranean/Anatolian Cuisine,
Very good family favourite;
Ingredients:
- 500 gr Fresh Green beans, trimmed, cut into medium or small size chunks, (if you want, you use frozen green beans, canned green beans or dried green beans),
- 1 Normal size onion, chopped,
- 2 or 3 Green peppers, chopped,
- 1 Normal size tomatoes, grated or very finely chopped,
- 1 Teaspoon Tomato paste or pepper paste,
- 1,5 or 2 Tablespoons Vegetable oil, (if you want, you can use olive oil or canola oil),
- 1 Tablespoon Butter,
- 2 or 3 Eggs, lightly beaten or add them directly,
- 250 gr Ground beef, (or ground lamb),
- 1 Teaspoon Ground black pepper to taste,
- 1 Teaspoon Red Flakes pepper to taste,
- 1 Teaspoon Salt to taste,
- 1 or 2 Glasses of hot water,
Preparation:
- First of all, put your all ingredients on your work surface. Then, clean and trim your fresh green beans to 2-2,5 cm (nearly 1 to 1/2 inch) pieces. (Some of our friends and we sonetimes, firstly boil the beans with hot water in a pan for about 15-20 minutes. But in this recipe we didn't use this process, we just add the fresh green beans as a raw and then add hot water)
- Then, heat the oil and butter in a large pan for about 3-4 minutes. Then, add your ground meat and sautéd, then add the chopped onions and green peppers in it. Cook them until their color change (lightly browned). Then add your grated or very finely chopped tomatoes and tomato paste. And stir couple of minutes.
- Now, time is fresh green beans time. Add your fresh green beans in it, and add 1 or 2 glasses of hot water. Cook your dish for 10 minutes over medium heat. Bye the way, stir from time to time, and don't let them burn.
- Then pour the beaten eggs (or add directly 3 eggs) in it, and sprinkle salt, ground black pepper and red flakes pepper, stir but not too much. Cook your meal gently for 3 or 4 minutes. When the eggs are cooked, turn the heat off.
- Then, place on a service plate and serve as a light breakfast or lunch. In breakfast, it is served with Turkish-tea and bread.
