         Our olive oil meals are so fresh and light. Olive oil dishes (in Turkish: Zeytinyağlı Yemekler) are very common in Anatolian Cuisine. They contain lots of olive oil and They are very traditional dishes that all Turkish people like them very much. Plus, olive oil meals are perfect for light summer lunch tables or as part of your side dish (in Turkish, we call it: Meze) offerings when you have relatives or friends over for barbecue. Generally, our olive oil meals are vegetarian (vegan recipes) and are mostly eaten cold. And, they are ideal dishes for the lose weight. Bye the way, maybe you can think that all these olive oil meals could almost sounds as if these types of meals are going to be really heavy on the stomach. But, No! Calm down!          In this post, we are going to share our very famous "Turkish Green Beans in Olive Oil Recipe (Zeytinyağlı Taze Fasulye) Recipe". We love it very much and cook it very oftenly. In Turkish, we call it: "Zeytinyağlı Taze Fasulye". It is 100% vegetarian and is mostly eaten cold. Also it is one of the healthy olive oil dishes.          According to us; every body should eat green beans (green beans recipe) every week or every ten days. Because it is very healthy and delicious. Also it is very easy to make. When we cook it, we generally use half the olive oil to cook, and half the olive oil after cooking to create a shinier dish. In this recipe we used Turkish Green Beans.          Recipe of Turkish Green Beans in Olive Oil Recipe (Zeytinyağlı Taze Fasulye)

        Here it is our Turkish Green Beans in Olive Oil Recipe (Zeytinyağlı Taze Fasulye) dish recipe;

         Serve: 4 - 6 servings, Preparation Time: 20 minutes, Cooking Time: 30-35 minutes, Food Type: 100% Vegetarian, Cuisine: Mediterranean/Anatolian Cuisine, 

          Very good family favourite;

           Ingredients: 

     - 1 kg Fresh green beans, washed, trimmed and cut into approximately 2 or 3 pieces, (Turkish green beans are better for this dish, but İtalian broad beans, or French beans are similar to those in Turkey),
          - 1Big size onion, finely chopped, 
          - 2 Cloves of garlic, sliced or chopped, 
          - 2 Big and large fresh tomatoes, peeled and finely chopped or grated or blended, 
      - 1 Teaspoon tomato paste or pepper paste, (it is optional, in this recipe, we only used grated tomato), 
          - 1 Teaspoon sugar, 
          - 1/2 Glass of olive oil or 3 tablespoons are enough, (for cooking process),
          - 1/4 Glass of olive oil, (For drizzling on top of pot or each service), 
          - 1 Cup hot water, 
          - A pinch of salt to taste,  

      P.S: These things are optional, if you want, you can add them to ingredients of dish: Bye the way, we sometimes use them for this dish. Forexample; 1/2 teaspoon cumin, (although not a traditional ingredient in green beans, we do love to touch of cumin in this dish), 1 tablespoon tomato paste or pepper paste (this meal is a summer times and cooked during high tomatoes season, yet some people do like dark, robust color of the tomato paste / pepper paste or use it when they don't have enough tomatoes to supplement), 

         Preparation: 
  1. First of all, put your all ingredients on your work surface. And, you should clean the green beans. So, take your fresh green beans, and clean and trim them (we mean that; trim the beans and snap the tails. Cut the beans into 2 or 3, depending on their length or cut into beans nearly 2,5-3 cm pieces / 1 to 1,5 inch pieces,)
  2. Then, add the olive oil to a heavy and large pot and gently heat, or heat the olive oil in a pressure cooker. And then, cook the chopped onions until soft, at the same time, add garlic and sugar, and stir until garlic is fragrant (it takes 1 minute).
  3. We didn't use it in this recipe, but if you want to use tomato paste or pepper paste, you can add it at this point and stir for a minute, then, add the beans with cumin, if you are using any (we didn't use cumin in this recipe), stir around until the green beans are coated in olive oil, and until beans slightly change color (this process takes 4-6 minutes), then, add the grated tomatoes and cook for 3-5 minutes and water and salt. Water should cover the beans completely, but be careful! not too much to make them seem like green beans are swimming in it.
  4. Then, cover the pan and cook with low to medium heat until the beans are soft. This process approximately takes 30-35 minutes. If you are using a pressure cooker. Cover and cook for 13-15 minutes after it reaches high pressure. 
  5. Then  remove from the heat and allow to cool before serving. Bye the way, regardless of in what kind of pot you cook green beans, you need to let it cool in the pot. Never transfer an olive oil dish from its pot until it gets to room temperature. 
  6. Our Olive oil dishes are traditionally served at room temperature or cold, however we won’t judge if you do warm it up. Also, they taste even better the next day. 
  7. It is optional, (but we always prefer to serve it with extra raw olive oil and recommend it to you) drizzle 1 or 2 tablespoons olive oil right before the serving.
