Turkish Fried Mixed Vegetables (Karışık Sebze Kızartma)
After the cold and snowy winter months, spring is slowly beginning to show its face. Colorful flowers and the chirping of birds have taken over every corner. In our homes, spring dishes are slowly starting to be cooked. Some are making squash dishes, some are preparing olive oil-based green beans, and others are cooking stuffed eggplant.
Along with the famous Turkish stuffed eggplant (Karnıyarık), Turkish green beans in olive oil (Zeytinyağlı yeşil fasulye) and Turkish Zucchini with Dill Weed and Garlic-Yogurt Sauce Dish. Fried mixed vegetables (Karışık sebze kızartma) was probably one of the another famous dish and we especially cook it in spring season.
In this post, we are going to share our fried mixed vegetables (Karışık sebze kızartma). If you want to, you can also enjoy fried mixed vegetables as part of a main meal. It will go really well with a portion of Turkish rice or bulgur pilaf. Grilled meats or chicken also make a perfect partner. Actually the ingredients for fried mixed vegetables with tomato sauce or yogurt sauce are much the same as those for Turkish shakshuka (şakşuka). However, the difference in the way your vegetables are cut, and the slightly different cooking method, makes for a different dish.
How to Make Turkish Fried Mixed Vegetables (Karışık Sebze Kızartma)!
Fried mixed vegetables (Karışık Sebze Kızartma) is often just the fried green peppers and aubergines but common vegetables for making it are aubergines, green peppers, courgettes carrots and potatoes. In Turkey, we use the long thin pointed peppers. If you can’t find this kind of peppers, bell peppers will be fine sliced into wide strips.
Sometimes, bitterness of eggplants are big problem for the meal's taste. For get rid of the bitterness of eggplants, We generally sprinkling a good amount of salt over eggplant slices or cubes before they’re cooked does draw out some of their moisture and lessens the bitterness. Let them sit for about 15-20 minutes and then lightly rinse some of the salt off before cooking.
This recipe is really very easy, simple and not complicated. If you dont like the fried one, you can cook it in oven. Generally, it is served with tomato sauce or plain yoghurt and garlic sauce or both of them. We love to eat it with both of them.

Recipe for Turkish Fried Mixed Vegetables (Karışık Sebze Kızartma)!

Ingreduents: 3 or 4 Green pointed peppers, |

Ingredients: 2 normal size Carrots, |

Ingredients: 2 cups sun flower oil, |

Ingredients: salt to taste, |

Ingredients: For tomato sauce: 3 Normal size Tomatoes, grated, |

Ingredients: 1 Teaspoon Tomato paste, |

Ingredients: 1 Tablespoon Olive oil, |

Ingredients: 2 or 3 cloves of garlic, finely chopped, |

Ingredients: a pinch of salt, |

Ingredients: For yogurt sauce: a cup of yogurt, |

Ingredients: 2-3 cloves of garlic, minced, |

Ingredients: a pinch of salt and a teaspoon of olive oil, |

Firstly wash your eggplants and then peel them to totally or in strip shapes, |

Then slice them lengthwise or round, 0,0,8 cm (1/3inch) thick as you like. Then salt them and leave aside for 15-20 mins. and then lightly rinse some of the salt off before cooking. Then set aside, |

Then peel the potatoes and slice them thin just like the French fries. And set aside, |

And peel the zucchini, and chopped them as lengthwise or round, and set aside, |

And peel the carrots and chopped them as lengthwise or round, and set aside, |

Then halved the green pointed peppers across the middle and set aside, |

Then add your sunflower oil to a large saucepan or deep frying pan and gently heat, |

Then fry the potatoes and place them over the paper towel. Sprinkle salt all over, |

Then fry the zucchini and place them over the paper towel. Sprinkle salt all over, |

Then fry the carrots and place them over the paper towel. Sprinkle salt all over, |

Then fry the green pointed peppers and place them over the paper towel. Sprinkle salt all over, |

If you want you can prepare your fried mixed in oven, and you can consume it without tomato sauce or garlic yogurt sauce, |

Meanwhile prepare your tomato sauce for the fried mixed vegetables. First, place the grated tomatoes and tomato paste in a pan and, |

Cook with a tablespoon of olive oil and a pinch of salt over low-medium heat. Cook the mixture till the sauce thickens for about 10-15 mins. |

Then prepare your garlic yogurt sauce. First put a cup of yogurt, a pinc of salt and minced garlic into the bowl and mix them very well. Then drizzle olive oil on top, |

Lastly mix all the fried vegetables or serve them separately as you desire. Then pour the tomato sauce or garlic yogurt sauce or both ontop, |

For the Fried Mixed Vegetables:
- 3 Medium size Eggplants, washed and cut into strips of 1.5 centimetre thickness,
- 3 Normal size Zucchini, washed and peeled,
- 3 Normal size Potatoes, peeled,
- 3 - 4 Green pointed peppers, halved across the middle,
- 2 - 3 Normal size Carrots, peeled,
- 2 Cups Sunflower oil,
- Salt to taste,
For the Tomato Sauce:
- 3 Normal size Tomatoes, grated/crushed,
- 1 Teaspoon Tomato paste,
- 1 Tablespoon Olive oil,
- 2 - 3 Cloves of garlic, finely chopped,
- A Pinch of salt to taste,
For the Garlic Yogurt Sauce:
1 Cup yogurt,
2 - 3 Cloves of garlic, minced,
A pinch of salt to taste
1 Teaspoon olive oil,
Preparation:
- First of all, put your all ingredients on the work table. Then peel your eggplants totally or in strip shapes. Then slice them lengthwise or round, 0,0,8 cm (1/3 inch) thick as you like. Salt them and leave aside for 15-20 minutes and then lightly rinse some of the salt off before cooking. Then set aside.
- Then peel the potatoes and slice them thin just like the French fries and peel the zucchini and carrots and choped them as lengthwise or round. Then halved the green pointed peppers across the middle and set all of them aside too.
- Then add your sunflower oil to a large saucepan or deep frying pan and gently heat. Once your oil is hot, add your sliced eggplants and let them sizzle and absorb the oil. Fry both sides of them. Be careful not to let them stick to the base of your pan. Then take them out and place over a paper towel to soak the excess oil.
- Then fry the potatoes, zucchini, carrots and the green pointed peppers the same way and place them over the paper towel. Sprinkle salt all over.
- Meanwhile prepare your tomato sauce for the fried mixed vegetables. First, place the grated tomatoes and tomato paste in a pan and cook with a tablespoon of olive oil and a pinch of salt over low-medium heat. Cook the mixture till the sauce thickens for about 10 - 15 minutes.
- Then prepare your garlic yogurt sauce. First put a cup of yogurt, a pinc of salt and minced garlic into the bowl and mix them very well. Then drizzle olive oil on top.
- Lastly mix all the fried vegetables or serve them separately as you desire. Then pour the tomato sauce or garlic yogurt sauce or both on top. Serve warm.
