Turkish Style Green Lentil Soup With Vermicelli Recipe
Do you like lentils soup? We love both green and red lentils soups alot. They are really our favourite soups. We cook both of them throughout the year. There are many different lentil soups in our country. Especially on a busy night, you can’t go wrong with this straightforward, uncomplicated, delicious Turkish style green lentil soup with eristeh. This flavorful soup comes from central Anatolia. It is also known as "Traditional Land Lady soup (hanım ağa çorbası)" throughout the Central Anatolia. When you try our delicious green lentil soup with eristeh/vermicelli/noodle. We are sure you like it alot.
Turkish-style Green Lentil Soup with eristeh is a classic vegetarian soup recipe. It uses very few ingredients but they come together perfectly. Especially with the dried mint and butter that is added to the finished soup. It is light yet hearty, pleasantly filling, and warms you up during these cold winter days.
This soup is packed with rich flavor, and it is really hearty enough to be eaten by itself for dinner.
What is Green Lentil Soup with eristeh / Vermicelli!
Lentil soup (green or red) is a great dish to make when you are feeling under the weather. It is also a good way to get some vegetables in your diet if you don’t want to eat meat often. Also green lentils are a good source of fiber, protein, iron, vitamin B-complex and zinc. It helps to produce red blood cells and prevent congenital disabilities.
Many Turks cook this delicious soup in their kitchens alot. But, here, (it is very interesting!) you cant find this soup served in restaurants.

History of Green Lentil Soup With Eristeh
According to historians; first soup was created as early as 10,000 years ago in China. In ancient times, Chinese people would use meat bones to make broth out of which they could eat. As time went on, Chinese people began adding vegetables and grains to their broth. Today, soup is considered a staple food throughout the world.
Green lentils originated in India and have been eaten that region since ancient times. Lentils were first introduced to Europe by Arabs in the 8. century. In Turkey, history of soup dates back to central Asia. Green lentils soup with eristeh was very famous and unique soup in the cousine of Ottoman. So, we can say that, we, as Turks, have cook this yummy soup for over 500 - 600 years.
How to Make Green Lentil Soup With Eristeh!
The green lentil soup requires only a few ingredients. You just need green rentils, eristeh (or noodle, or spaghetti pasta), mint and oil. Our recipe is very clear and simple. If you follow our recipe, you can prepare it very easy and fast. It is not complicated. Green lentils are always perfect option for this soup. But if you dont find green lentils. Dont worry! You can use red lentils instead of the green lentils. Also lentils (both red and green) do not need to be soaked. Because lentils cook very fast. Most lentils will cook in about 25 minutes or less.
We always use homemade eristeh for this soup. But, if you want, you can use noodle or spaghetti pasta instead of the eristeh. Or if you have time, you can make homemade eristeh for this soup: Reserve 2-3 tablespoons of flour. Add a pinch of salt and 1/4 cup of water to make a stiff dough. Knead it for about 2-3 minutes. And let it stand for about 5-6 minutes. Then divide dough into 2 parts. And roll out it into 3 mm thick circles. Put one on top of another sprinkling with flour between and over. Cut into 4 pieces. Place 4 pieces on top of each other. Cut into 0.5 cm (1/4 inch) strips. Cut strips into small pieces of squares. That is it. Your eristeh is ready.
Recipe for Green Lentil Soup With Eristeh
As we mentioned above of the post, green lentil soup requires only a few ingredients. The full recipe with the exact measurements is listed in below.
Serve: 4 Servings, Preparation Time: 5 or 6 minutes, Cooking Time: 25 or 30 minutes, Cuisine: Mediterranean/Anatolian Cuisine,
Very good family favourite;
Ingredients:1/2 Cup of green lentils, (200 -250 gr), |
Ingredients: 1/4 Cup of eristeh, |
Ingredients: 1 Normal size onion, finely chopped, |
Ingredients: 1 Tablespoon of tomato paste, |
Ingredients: 1 Tablespoon of butter, |
Ingredients: 2 Tablespoons of sunflower oil, |
Ingredients: 7-8 Glasses of water, |
Ingredients: 1 Teaspoon of salt, 1/2 Teaspoons of red pepper flakes and ground black pepper, |
Ingredients: 1/2 Teaspoon of dried mint, |
Start by washing the Green Lentils with cold water at least 2 times and drain, |
Then, fill a small pan with water and put the green lentils in it and bring to a boil, |
Then, drain green lentils and rinse and set aside, |
Meanwhile, chop the onion finely, |
Then, in a large pot, put butter, sunflower oil, onion and cook the mixture until the onion softens, |
Then, add the tomato paste and continue to stir, |
Couple of minutes later add the softened green lentils into the mixture and stir, |
Then, add 7 or 8 glasses of water into the mixture and stir, |
Lastly add salt, ground black pepper, red flakes pepper, |
And dried mint into the soup mixture and cover the pot with a lid and reduce the heat to medium-low and cook it for about 20-25 mins, |
After 20-25 minutes, add the eristeh and stir well, cover, and cook for an additional 10 mins, |

Ingredients:
- 1/2 Cup of green rentils, (200-250 gr.),
- 1/4 Cup of eristeh,
- 1 Normal size onion, finely chopped,
- 1 Tablespoon of tomato paste,
- 1 Tablespoon of butter,
- 2 Tablespoons of sunflower oil,
- 7-8 Glasses of water, (if you want, you can use broth instead of the water),
- 1 Teaspoon of salt,
- 1/2 Teaspoon of red pepper flakes,
- 1/2 Teaspoon of ground black pepper,
- 1/2 Teaspoon of dried mint,
Preparation:
- First of all, put your all ingredients on the work surface. Then start by washing your Green Lentils with cold water at least two times and drain. Then, fill a small pan with water and put your green lentils in it and bring to a boil (until green lentils are softened). Then, drain the green lentils and rinse and set aside. Meanwhile chop your onion finely.
- Then, in a large pot, put butter, sunflower oil, onion and cook the mixture until the onion softens. Then add the tomato paste and continue to stir. Couple of minutes later add the softened green lentils into the mixture and stir.
- Then, add 7 or 8 glasses of water into the mixture and stir. Lastly add salt, ground black peper, red pepper flakes and dried mint into the mixture and cover the pot with a lid and reduce the heat to medium-low and cook it for about 20-25 minutes.
- After 20-25 minutes, add the eristeh and stir well, cover, and cook for an additional 10 minutes.
- Green lentils soup with eristeh is ready. Serve your soup as warm or hot. Turkish style potatoes salad goes well with this yummy soup.
