Traditional Turkish Noodles (Kesme-Eriste) Dish's Recipe
As we said in previous post; We haven't been making Turkish pasta / Turkish noodle (erişte) dish for a long time because of our children dont enjoy this dish. Homemade Turkish pasta / Turkish noodle (erişte) dish is a healthy family dish. But, our children and youth are keen on store bought pasta, noodles or spaghetti dishes and they consume them more than the our "Erişte Dish". Actually, homemade pasta, noodles or spaghetti dishes are all healthy family dishes and very old dishes. According to historians; pasta base dishes have been consumed since the 13th Century.
How to Make Easy Turkish Noodles Kesme-Eriste dish
In this post we are going to share our easy eriste dish with you. This easy erişte dish recipe is ready in just 10-15 minutes and this super quick meal is a hearty, comforting meal during the cold winter days and even you can eat it in summer days too. It comes easily for a comforting weeknight meal.
Recipe is so easy and simple. You just boil the erişte with salty water, then, heat up a pan and add the olive oil or butter or both. Garnish with the cheese and walnuts (especially using a stringy mozzarella or Turkish white cheese since it provides the right texture and a mild flavor). That is it. Done! Bon appetite!

Recipe for Easy Turkish Noodles Kesme-Eriste dish
Our Turkish Noodles Kesme-Eriste dish is traditionally a homemade dish, and not often found at restaurants or cafés.
Ingredients: 2 Cups of Turkish noodles - Erişte |
Ingredients: 4 cups of water, |
Ingredients: salt, butter or olive oil or both, |
Ingredients: garnishing with Turkish white cheese or mozzarella cheese and walnuts, |
For garnishing: mix the chopped parsley and cheese, |
Boil the erişte into pan with salted water and then drain, |
Then add butter or olive oil or both into pot |
Then add erişte and water and cook Turkish noodles mixture until erişte soak all the water, |
For vegetarian version: ingredients are Turkish noodles, water and salt. |
When the erişte soak all the water, remove it from the heat and Garnish it in the serving plate and eat hot. |
Then garnish it with cheese and parsley mixture and Couple of pieces of walnuts or ground walnuts. |
Serve Turkish noodles / Erişte dish hot |
Here it is our Easy Turkish Noodles Kesme-Eriste dish's recipe;
Very good family favourite;
Serve: 2-3 servings, Preparation Time: 5 minutes, Cooking Time: 10-15 minutes, Cuisine: Mediterranean & Anatolian Cuisines,
- 2 Cups of Turkish noodles / Erişte,
- 4 Cups of water,
- 1 Tablespoon salt,
- 2-3 Tablespoons Butter or olive oil,
- For garnishing: crumbled Turkish white cheese or mozzarella cheese,
- For garnishing: 2-3 pieces of Walnuts or a teaspoon of ground walnuts for each plate,
- For garnushing: 1/4 Bunch of parsley, chopped,
Preparation:
- First of all, put your all ingredients on your work surface. Then, cook the pasta in a large pan of salted boiling water and once it bolis, drain it and return to the pan. And add noodles, butter or olive oil, water and cook on low-medium with the lid slightly ajar until noodles soak all the water.
- We generally serve our Turkish Noodles Kesme-Eriste dish with crumbled white cheese and parsley mixture and couple of pieces of walnuts or ground walnut on top.
P.S: if you want to prepare vegetarian version of this dish, you use all ingredients except butter and cheese.

DeleteMy late granny used to make her own noodles and I still have the machine for it somewhere in the basement but I don't have the time to use it, takes too much time and bought pasta is so cheap these days especially as we can buy gluten free pasta too - made from lentils, chickpeas, spelt etc.
