How to Make Leek & Cheese Tart (Pırasalı Kiş)!
Leeks are a member of the allium family like onions, garlic and shallots. And leeks are not as strong in flavour as onions and are easily available in winter and early spring. Leeks base dish, borek, tart and salads are very popular here in winter times. Actually, you can find this vegetable through out the year, but we mostly consume it alot in winter season.
In this post, we are going to share our "Leek & Cheese Tart (Pırasalı Kiş) Recipe" with you. Leek & Cheese Tart is a double cheese delight. Follow the step by step our recipe for a melt in the mouth cheese pastry case filled with a creamy mixture (custard), gently sautéed leeks with delicious little chunks of cheese.

People Who Love Leeks and Don't!
Leeks are such a beautiful vegetable and it is member of the onion family. Especially we cook leek base dish alot in winter season. But, we are not sure that everyone like it. Because, while some people like this dish very much. Some people don't. Generally our children and teenagers don't like leeks. What about yours? Although our "leeks, Carrots and Rice Cooked in Olive Oil (Zeytinyağlı Pırasa)" dish is very healthy, hearty and tasty, we don't cook it alot, Because of our children don't like it. But, leek borek (pastry), leek & cheese tart or leek base salads are loved by the youth and we make leek and cheese tart alot during the cold winter season.
On the other hand, leeks, like garlic and onions, contain many beneficial things for the good health. According to medical science; raw leeks or cooked leeks are consumed regularly by the people, because, leeks are very useful for the cardiovascular system of human organism.

How to Make Leek & Cheese Tart (Pırasalı Kiş)!
There are no fancy ingredients in this "Leek & Cheese Tart", everything you need is easily available and not expensive. It is not difficult and complicated. In this recipe, the combination of leek and cheese is a creamy delight. This tart is perfect for a lunch dish with a green salad, or serve bite-sized pieces as an appetizer. This tart is also a delicious cold on a picnic or for a late dinner. You can also make them individual. We are sure that, when you try this recipe, you and your house hokds like it and make this dish alot.
What Kind of Cheese Can We Use?
We uvsed Turkish cheese (feta chese) in this recipe, but, if you want, you can choose your favourite cheese (cheddar cheese, goat cheese, parmesan cheese etc.) to add to the filling. With leeks and cheese being easily accessible in most regions year-round, and make this tart with a fresh green salad for a dish that is sure to impress. Make sure to allow enough time for your dough to rest before using it.

Ingredients: For tart dough; 2 eggs and 1 cup of yogurt, |
|
Ingredients: For Tart dough; 1/2 cup of sunflower oil and 1 tablespoon of butter, |
|
Ingredients: For Tart dough; 2 cups of flour and 10 gr baking powder, |
|
Ingredients: For Leeks mixture; 3 branches leeks and 1 egg, |
|
Ingredients: For Leeks mixture; 3 tablespoons of olive oil, |
|
Ingredients: For Leeks mixture; 1/2 teaspoon of salt, ground black pepper and red pepper flakes, |
|
Ingredients: For Leeks mixture; 1 cup whipping cream and feta cheese, |
|
Ingredients: For topping; 1/2 cup of pale yellow cheese, |
|
First slice the leeks into rounds 1/2 cm thick, |
|
Then clean in cold water and drain in colander, |
|
Then heat the olive oil in a pan and then add the leeks and stir, |
|
Then add 1/2 teaspoon of salt and stir, |
|
Then add 1/2 teaspoon of ground black pepper and stir, |
|
Then add 1/2 teaspoon of red pepper flakes into mixture and stir, |
|
Cook mixture gently until leeks are soft but not coloured, then remove it from the heat and let it cools, |
|
Then add crumbled feta cheese and egg and stir the mixture, |
|
Then add whipping cream into mixture and stir mixture and set aside, |
|
For tart dough; combine all ingredients in a bowl, first add eggs into bowl, |
|
Then add yogurt into bowl and stir, |
|
Then add sunflower oil into mixture and stir, |
|
Then add flour and your hands to gently form a dough, |
|
Then add baking powder into mixture and continue to knead your dough |
|
Then let it to rest for a while (10-15 minutes) |
|
Then roll out the dough thinly in a circle, |
|
Meanwhile grease your tart tin or baking tray with butter, |
|
Then Line the tart tin or baking tray |
|
Trim the dough around the edge of the tin but leave enough to allow for a little shrinkage, |
|
Don't forget to poke holes with a fork. So that your tart doesn’t over swell, |
|
Then pour the leeks mixture over the tart's dough, |
|
Spread the leeks mixture all over the tart's dough, |
|
Now your tart is ready to first baking process, |
|
Preheat the oven to 180°C (356°F) and bake it until golden brown or for about 20-25 mins. |
|
Then remove it from the oven, |
|
Lastly grate your pale yellow cheese, |
|
Then sprinkle the grated cheese over the leeks tart, |
|
Then again bake it in the oven until cheese melts or for about 5-10 mins. |
|
Serve leeks and cheese tart warm or cold, |
|
It is really perfect for lunch, supper or serve as a dinner party appetiser |
Recipe for Leek & Cheese Tart (Pırasalı Kiş)!
No matter what the weather is like, this savoury and creamy tart is absolutely delicious.
Here it is our Leek & Cheese Tart's recipe;
Serve: 4-6 servings, Preparation Time: 20 minutes, Cooking Time: 30 minutes, Cuisine: Mediterranean/Anatolian Cuisine,
Very good family favourite;
For Tart Dough;
- 2 Eggs,
- 2 Tablespoons Yogurt,
- 1/2 Cup Sunflower oil, (or canola oil),
- 1 Tablespoon butter, (for grasing tart tin or baking tray),
- 2 Cups all purpose flour,
- 2 Teaspoons baking powder, (nearly 10 gr),
For Leeks Mixture (Filling);
- 3-4 Branches Leeks, (Clean and trim leeks),
- 1 Egg,
- 3-4 Tablespoons olive oil, (if you want you can use sunflower oil or canola oil),
- 1/2 Teaspoon salt,
- 1/2 Teaspoon ground black pepper,
- 1/2 Teaspoon red pepper flakes,
- 1 Cup Whipping cream, (nearly 200 ml),
- 1 Cup crumbled white cheese/ feta cheese, (if you want, you can use cheddar cheese, parmesan cheese or goat cheese),
For Topping;
- 1/2 Cup grated pale yellow cheese, (or cheddar cheese or mozzarella cheese),
Preparation:
- First of all, put your all ingredients on your kitchen container. Then first process is preparing the filling (leek, egg and whipping cream mixture); Slice the leeks into rounds about 1/2 cm thick and clean in cold water and drain in a colander. Heat the olive oil in a large frying pan or saute pan and then add the leeks, salt, ground black pepper, red pepper flakes and cook gently until they are soft but not coloured (checking on it every few minutes to stir and make sure it doesn’t catch). Then remove it from the heat and let it rest for cooling (for about 10-15 minutes). After it cools, add egg, crumbled feta cheese and whipped cream into mixture and mix all of them well and set aside.
- For tart's dough; in a medium bowl, combine your all purpose flour, water, yogurt and salt. With a spatula or wood spoon, mix ingredients and stir until a dough forms (or use your hands to gently form a dough, which is sticky at this point). Then let it to rest for a while (10-15 minutes). Meanwhile, grease your tart tin (or baking tray) with butter. Then roll out the tart dough thinly in a circle and line the tart tin (or baking tray). Trim the dough around the edge of the tin but leave enough to allow for a little shrinkage. Don't forget to poke holes with a fork. So that your tart doesn’t over swell.
- Then pour the leeks, egg and cream mixture over the tart's dough and then preheat your oven to 180°C (356°F) and bake it in the oven for about 20-25 minutes until golden brown and remove it from the oven. Finally place your grated pale yellow cheese on top of tart and rebake it in the oven for about 5-10 minutes until pale yellow cheese melts.
- Serve the Leek & Cheese Tart warm or cold with the salad. It is really perfect for lunch, supper or serve as a dinner party appetiser.
