In this post, we are going to share our very simple and very yummy pastry/byrek/börek recipe to you. It is fluffy pancake recipe. It is a very popular pastry as street food and part of the Turkish breakfast. Also we consume it in lunches. We call it in Turkish: "Gözleme".The name "gözleme" originates from the word "eye" (in Turkish göz means "eye"). How to Make Turkish Feta Cheese & Parsley Pancakes (Gözleme)?
This fluffy pancake recipe is so simple. It is not complicated. A basic pastry dough is made from flour and water (for some recipes, you might see the addition of yeast or egg, but in this recipe, we used only main ingredients). A chunk not much bigger than a golf ball (nearly egg size) is taken from the dough, flour is sprinkled over the low table top and the dough placed in the centre. Set them aside for a while, then pieces of dough are ready to preparing pancakes and cooking process. Also you like our famous Flaky-spinach-byrek-recipe.
Ingredients: plain flour, salt and water. Spring Water is better! |
Ingredients: Feta cheese and parsley for filling |
Ingredients: for grasing; vegetable oil and buttet |
Mix flour, salt and water and knead mixture |
Knead your dough for 10-13 mins. Then put it In a plastic bowl and cover it and let it stand For aboutv15-20 mins |
Cut pancake/gözleme dough 8-10 equal walnutt size Or golf ball size pieces |
Keep them on the kitchen counter |
With the roller pin roll out the circle 20-23cm in Diameter |
Roll out the all dough pieces into 20-23 cm diameter |
Grease each your circle piece of dough |
Grease all of them |
Mix crumbled feta cheese and chopped parsley For filling |
Spread the filling equally in the middle of the dough |
Then fold it in the sides. Your dough looks like Flat square |
Heat up the teflon pan |
Cook one side of pancake/gözleme until there are Some "brown eyes" |
Then turn it over and brush this side with butter |
Then brush the other side with butter after cooking |
Serve Pancake-Gözleme while it is warm |

Here it is our easy pancake recipe, here it is our yummy Turkish Feta Cheese & Parsley Pancakes (Gözleme) recipe;
Serve: 4 servings, Preparation Time: 30 minutes, Cooking Time: 20 minutes, Cuisine: Mediterranean/Anatolian Cuisine,
Very good family favourite;
Ingredients:
- 1,5 Cups plain flour (nearly 300 gr plain flour),
- 1/2 Cup water, (spring water is better),
- 1/2 Tablespoon salt,
For Filling:
- 1/2 Cup Feta cheese, crumbled,
- 1/4 Bunch of parsley, chopped,
- 1/2 Cup oil and 2 tablespoons butter for grasing Turkish pancake/Gözleme, (it is optional, if you want, you can use olive oil or vegetables oil or butter),
Preparation:
- First of all, put your all ingredients on your work surface. Then, place the flour and salt in a bowl. And make a well in the middle, then slowly add water while you kneading (Please watch out that you may need to adjust the quantity of water -Please! Don't get the pancake / gözleme dough too wet).
- Then, put your dough on the lightly floured kitchen counter and knead well for about 10 -13 minutes until it becomes smooth and elastic. You should knead until you reach a dough that doesn't stick to your hands. Then, put your dough in a plastic bowl and cover it (or cover with a tea towel), and let it stand for 15 - 20 minutes.
- Then, cut the pancake (gözleme) dough into 8-10 equal walnutt size or golf ball size pieces. Then with the help of your roller pin, roll out the first into a circle about 20 - 23 cm (nearly 8 inch) in diameter. Then, grease each your circle piece of dough (we used a little vegetable oil and a little butter for grasing). Then, spread the filling ingredients (feta cheese & parsley mixture) equally in the middle of the dough. After this process, fold it in the sides (First fold the opposite sides to cover the filling. Then fold the 3rd side and Lastly the 4th side to Cover up the filling). Your dough should look like a flat square.
- Then, heat up the teflon pan (or Crepe pan or non-stick frying pan) just under medium heat. Cook one side of pancake (gözleme) until there are some "brown eyes" on it. Then turn it over and brush this side with butter. Also brush the other side after cooking.
- Remove from the pan and serve pancake (gözleme) while it is warm with Turkish salty yoghurt drink (ayran) and Turkish pickle.
