Cotton Soft Home Made Turkish Pogaca


Turkish Pastry is a nice Mediterreanen food for breakfast and tea parties. Especially in Turkey (Anatolian) Pogaca is the traditional savory pastry that you can find it all pastry shops or bakeries. Also Turkish women often cook pogaca for the households or tea parties (In Turkey women often join tea parties with neighbors or relatives ). On the other hand, pogaca is the best breakfast when you are in hurry. Forexample, people stop by pastry shops or bakeries to buy pogaca on the way to their work early time in the morning. Because, pogaca is the best breakfast when you dont have the time for breakfast at home. If you looking for a savory snack that you give your children after they come back to school, pogaca is the best snack for them.
Actually, every country and every house has their own pogaca recipe. Of the opinion of us "Home Made Turkish Pogaca" is special and different. Because, it is fluffy, very soft and very delicious and it can keep soft up to 7 days. You can even get up in the middle of the night and you can eat one. Also, "Cotton Soft Home Made Turkish Pogaca" helps grandmothers or grandfathers who have chewing or swallowing difficulties.
Turkish Pogaca (Pastry)'s Recipe
You can find Turkish Pogaca different fillings; such as feta cheese, olives, potatoes and mince. Of course, it is possible to find it with nofillings.  We try to give "Cotton Soft Home Made Turkish Pogaca"s recipe with nofillings:

NOTE: First of all, when making this "Cotton Soft Home Made Turkish Pogaca", everything should be stayed at room temperature. These ingredients (Yeast, milk, yogurt or mineral water) make your pogaca very soft and keep softness-freshness up to 7 days. But if the ingredients are cold, your pogacas (pastries) will not be as soft as desired. 

Ingredients:
 For Pogaca's Dough:
- 4 cups flour,
- 1/4 cup warm milk,
- 1 table spoon yeast
- 1/2 cup olive oil (or vegetable oil),
- 1 table spoon sugar and salt,
- 1 cup yogurt (or mineral water),
For Coating Pogacas' Top:
- 1 egg yolk and 1 tablespoon olive oil,
- Sesame seeds (or poppy seeds, nigella seeds),

Preparetion:
In a large mixing bowl, mix everything together (egg - white,  warm milk, yogurt, olive oil, Salt,  sugar, yeast). Knead mixture with your hands adding the flour gradually. In a short time you should get a soft dough (you should have a pliable and nonsticky dough). Then let it rest for 45 minutes. Then make small-walnut sized balls (or make small rounds as big as half of your palm). Place a parchment paper in a baking tray and place the pogacas on it (they shouldnt touch eachothers and should have some space to expand). In a small bowl whisk an egg yolk and tablespoon of olive oil. Using a brush (or your hand) spread this mixture on the pogacas. Then sprinkle sesame seeds (poppy seeds, nigella seeds) on each pogaca. Preheat the oven at 180°C, then bake them about 25 - 30 minutes, until they get golden color.
