Mostly, street foods are sold by the wendors or hawkers. We always support "Homemade foods " and homemade foods are always better than the others, but, Turkish people mostly prefer to eat street foods, because they are cheaper on average than the restaurant meals in Turkey.       Today, we are going to share our very unique and very yummy pastry/byrek/börek (easy pancake recipe) recipe to you. It is a very popular pastry as street food and part of the Turkish breakfast. We call it "Gözleme". "The proper name of Gözleme word comes from the Turkish word "eye". When you cook it, you will know they are done when brown -eyes- form on the dough of Gözleme, tiny (little) golden indicator lights, letting you know your dinner or your breakfast is ready". We consume this fluffy pancake everytime. Actually, this fluffy pancake recipe is definitely a nationwide favorite in Anatolia (Turkey). It is made for or served for so many daily activities of Turkish people, such as in the morning for part of the breakfast or in the afternoon for tea parties or in the evening for a dinner.    Actually, pancake recipes are very popular in many regions of the world. Forexample; in France there is the Crépe (crépe recipe), in Spain there is the empanada, in India you can find the Samosa, in Britanny you can find the Gallette. Even, you can find same pastry/byrek/börek in North Africa. Plus  different communities also have their own version of the pancake and in Turkey there is the wonderful and perfect pancake (Gözleme). It is like a stuffed pancake but our Gözleme is realy unique, only it is made with a dough (not a batter) which is stretched and pulled and stuffed (forexample: with spices minced meat or cheese and parsley or cheese and spinach or onions or potatoes etc.) and then fold it over a hot pan for cooking.          As we said above of the post; Turkish Pancakes -No Filling- (Gözleme) is definitely a nationwide favorite in Anatolia (Turkey). Our Gözleme (Turkish Pancake) is realy so unique and its preparation is so easy. It is made with a dough (not a batter) which is stretched and pulled and stuffed (forexample: with spices minced meat or cheese and parsley or cheese and spinach or onions or potatoes etc.) and then fold it over a hot pan for cooking. Gözleme ingredients: Plain flour, water and salt


After kneading dough, put it bowl and leave for 15 minutes

Make golf ball or wallnut size pieces

Rollout each piece into 20cm circle 

Grease your each piece with veg oil and butter

Fold it in the sides: flat square shape

Heat Crépe pan and cook it. When it is done, brush the top with melted butter

         Recipe of Turkish Pancakes -No Filling- (Gözleme)

      Yes today, we are going to share our Turkish Pancakes -No Filling- (Gözleme)/ Plain or no filling Gözleme recipe to you. 

           This recipe is really so simple. A basic pastry dough is made from flour, water and salt. A chunk not much bigger than a golf ball (or wallnut size and shape) is taken from the dough.

         Serve: 4 servings, Preparation Time: 30 minutes, Cooking Time: 20 minutes, Cuisine: Mediterranean/Anatolian Cuisine,

         Very good family favourite;

          Ingredients:

         - 300 gr Plain flour, 
         - 1/2 Tablespon salt, 
         - 250-300 ml water, 
         - 1/2 Cup of oil and 2 tablespoons butter for greasing Turkish pancake/Gözleme, (you can use olive oil or vegerables oil or butter. In this recipe we used vegetable oil and butter)

         Preparation: 

  1. First of all, put your all ingredients (all purpose flour, salt, water and oil) on your work surface. 
  2. Then, put the all purpose flour and salt into a large and deep bowl, make a well in the middle, and then slowly mix in the water to form a slightly sticky dough. 
  3. Please watch out that you may need to adjust the quantity of water -Please! Don't get the gözleme dough too wet. Then, turn out onto a floured surface and knead it for about 5-10 minutes until it becomes smooth and elastic. you should knead until you reach a dough that doesn't stick to your hands. Pop back in the bowl, cover with a tea towel and leave for 15 minutes. 
  4. Then, cut the gözleme dough into 8 equal walnutt size or golf ball size pieces. Then with the help of your roller pin, roll out the first into a circle about 20cm (8 inch) in diameter. Then, grease each your circle piece of dough (we used a little vegetable oil and a little butter for grasing). After this process, fold it in the sides. Your dough should look like a flat square. 
  5. Then, heat your Crepe pan or non-stick frying pan on medium heat. Cook your Turkish pancake (Gözleme) until it starts to turn golden brown, then flip it over. Brush the top with a little vegetable oil or melted butter (in this process, we only used melted butter). 
  6. Remove from the pan and serve hot.
