Especially, in Eastern part of Turkey, Turkish chillies (hot red peppers, hot green peppers, hot baby peppers etc.) and other spicies can be served with any dish.

Turkey is always at the crossroads of the old spice trade routes that connect Persia and the whole Mediterranean region. Winter to summer, fresh (green or red) peppers are always being on our lunch or dinner table. Our fresh peppers, dried peppers and pickled peppers go well all meals very much. We have consumed them since we were children. Especially, we like pickled hot chilies. Turkish dried peppers flakes brands are very famous and good quality. Forexample, Kahramanmaraş city famous silk crushed red pepper flakes, Hatay city Samandag town's hot chili peppers and Şanlıurfa city famous red pepper flakes (it is called "Isot chili/Urfa biber") are very popular and unique all around the world. Plus, pickled hot baby peppers (Acı cin biber turşusu), hot long green peppers (Acı sivri biber turşusu) are very special and popular too.

Today, we are going to share our "homemade pickled hot baby peppers (cin biber turşusu) recipe". Don't worry! Because it is really very easy, it is not complicated. Maybe you ask that "How long do pickled hot peppers last?" Answer is; this recipe is quick and keeps wonderfully for at least a year or two years if you process the jars correctly.

Generally, Turkish "hot baby chili pepper (in Turkish, we call it: cin biber)" or "Turkish hot chili long pepper (in Turkish, we call it acı sivri biber)" are used for the pickle. For this recipe; we used the Turkish "hot baby chili peppers". They are small, bright green and very hot. Also, you can use Turkish hot chili long pepper instead of the hot baby chili peppers. They are long, bright green and moderately hot. Both kinds of peppers are our favourite.

When you prepare your homemade pickled hot baby peppers (cin biber turşusu), watch out that these things;

  • When you buy hot baby chili peppers, you trt to choose small ones and bright green ones.
  • Do not forget to put on the gloves before you start manipulating the peppers! If you forget it and touch your nose or eyes afterwards, you will suffer for several hours or more.
  • Wash the chili baby peppers well and cut the stems off, but you don't need to remove the pepper seeds. Keep them, so your pickles will be hotter and tastier.

Recipe of Hot Baby Chili Peppers' Pickle

This hot baby chili peppers' pickle goes well meat dishes and it can be served with any dish from your kitchen. This recipe of hot baby peppers (cin biber turşusu) pickle for a medium size glass jar.

Here it is our famous "Hot Baby Chili Peppers' Pickle Recipe";

Very good family favourite;

Serve: A medium size glass jar pickle, Preparation Time: 10-13 minutes, Cooking Time: 15-20 minutes, Cuisine: Mediterranean & Anatolian Cuisines,

Ingredients:

  • A medium size clean glass jar,
  • 500 gr Hot baby chili peppers, (Small and bright green ones is better),
  • 7 or 10 cloves garlic, chopped roughly or cut each one into two pieces, 
  • 4 or 5 bay leaves, (it is optional, but bay leaves prevent bacteria in the pickles and its taste and smell better),
  • 1/2 Handfull Dried Chickpeas, (we often use dried chickpeas, because they are very important for the fermentation process. You should place the dried chickpeas to cover the bottom of the jar. Because, chickpeas assist the fermentation process and absorb impurities that would otherwise make the juice cloudy), 
  • 2 Tablespoons Rock salt, (if you want, you can use sea salt),
  • 1 Teaspoon granulated sugar,
  • 1 Cup vinegar, (Good quality vinegar is always better),
  • 1 Lemon juice and half lemon sliced, (it is optional, but we often use it),
  • 1/2 Teaspoon Lemon salt, (it is optional, but in this recipe we used it),
  • 2 Water glasses of purified water or as you needed depending on your jar size,

Preparation:

  1. First of all put your all ingredients on your work table, then clean your medium size jar well, preferably with boiled water. Then, wash your hot baby chili peppers well and cut the stems off. 
  2. Then, for preparing your pickle's (Turşu) juice; you should prepare in the steel or aluminum pots or teflon pot. Hot baby chili peppers pickle's (Turşu) juice is made from salt, vinegar, water, sugar, juice of lemons and lemon salt. Bring the water to the boil, dissolve in the salt and add the vinegar. At the same time, squeeze the lemons into this pot. At the end of this process, your pickle juice is ready. 
  3. Then, take your medium size glass jar and cover the bottom of the jar with a layer of chickpeas and couple of bay leaves, then fill your jar with the hot baby chili peppers. Then pour your pickle juice onto hot baby chili peppers (you will cover the pickles with this pickle juice to the top). Make sure all the pickles are covered with this pickle juice. Then, add lemon slices and rest of the bay leaves on top.
  4. Then, close the lid of your jar tightly and place it in a dark, dry and cool place of your home. Leave for fermentation for about 1 month. (You can let the jar sit for 1-2 months if desired). Bye the way, after about two weeks, you should check that everything is okay with your hot baby chili peppers pickle. We mean that don't forget to check the water level. If it would lower down, so add some more pickle juice. Then, close it again. When your pickle is done, the peppers will change in color (forexample: your hot baby chili peppers look yellowish and translucent,) and they will become crispy. It is done, you may serve it as a side dish.
  5. This Pickled hot baby peppers (cin biber turşusu) goes well with "meat dishes" and all dishes.
