In this post, we are going to share our new brand pickle to you. It is one of vegan recipes. It is very popular in mediterranean diet. It is capia peppers pickle and it is super easy and it is ready very quick. After the preparation of pickled red capia peppers, you can open it soon (nearly 2 hours) and eat it with meals. Because, it is quick pickle, but if you want, you can keep these pickled peppers in a cool and dark place for about 15 days or until your eating time (winter times), also you can keep them in refrigerator for a long time. Ingredients:

  1. 1 or More (2-3) medium size clean glass jar or jars, 
  2. 1 kg Red capia peppers, trim their caps and remove seedpods, cut them as 2 cm (0.78 inch) long size, 
  3. 1 Glass of grape vinegar, (if you want, you can use apple vinegar), 
  4. 1 Glass of oil (olive oil or vegetable oil. In this recipe, we used olive oil), 
  5. 1 or 1,5 Glass of water,
  6. 7 or 8 Cloves garlic, 
  7. 1/2 or 1 Tablespoon Rock salt,
  8. 1/4 Bunch of parsley -optional-

Preparation:

  1. First of all, put your all ingredients on your work table. Then, wash and cut the tops off your capia peppers and remove seedpods. Then, in a large pot, put olive oil, vinegar, salt, water and bring to boil olive oil, vinegar, salt and water on medium heat. This process takes nearly 10-11 minutes.
  2. Then, take your chopped 2 cm long shaped capia peppers and add them and garlics into pot and cook mixture for a little while (3-4 minutes), we mean that; cook mixture until pieces of capia peppers turn to alittle soften (not over cooked or too soften). Then, turn the heat off and take alittle softened peppers in to a plate and let them cool down. Bye the way, keep the mixture of the boiled olive oil, vinegar, salt and water. Because we use it later. 
  3. After these processes, arrange the red capia peppers into the medium clean glass jar or jars. Then pour mixture of the boiled olive oil, vinegar, salt and water into jars. If you want, you can use 1/4 bunch of parslet on this stage. Put them on top of the jar or jars.
  4. Then, tightly cover the jar, turn up side down. DONE! Just you need to wait 2 hours. 2 hours later your super easy and quick pickled red capia peppers are ready. 
  5. But, if you want to use this pickle later in the winter times. You should keep these pickled peppers in a cool and dark place for about 15 days or keep them in refrigerator. Bye the way, don't forget to turn the jar or jars up side down occasionally.
