Turkish Gobit Pita Bread (Gobit Ekmek)

Gobit Pita Bread is generally a popular street food in Turkey. Turkish gobit pita bread is a type of bread sandwich usually served with Turkish market doner chicken or doner meat or boiled egg. Its name comes from the fact that the bread is generally round and plump in shape.

In fact, Gobit Pita Bread have been both a bread and a utensil throughout the Middle East region and Eastern Mediterranean region serving the function of loaves of bread in wheat centric areas of Europe, Africa and Asia.
History of Gobit Pita Bread!
From what archeologists and historians can determine, Gobit Pita Bread originated with peoples west of the Mediterranean. It has consumed for over 4000 years in west of the Mediterranean and Middle East region. It is not perfectly clear if it was the Amorites or the Bedouins were the inventors. Both the farming and desert society respectively adopted gobit pitas as their own. Soon, its popularity spread as the Bedouin peoples traded and travel across the Arabian and Sahara desert.
How to Make Gobit Pita Bread!
Originally, the gobit pita bread was a combination of dough that was let to sit and collect yeast and fresh dough until the discovery that brewers yeast works. In the Turkey and many countries of Middle East, It is still often made in a backyard stove compared to the store-bought pitas that have spread all over the globe. We mostly make this delicious bread in oven but it is made in backyard stove one is more delicious than the oven baked one.
Its preparation is super easy and its ingredients are really very simple. We are sure that when you try this delicious bread recipe in your kitchen. Your house holds and you like it alot.
Recipe for Gobit Pita Bread
As we mentioned above of the post, Gobit Pitta Bread generally has a soft and fluffy texture. This provides a delicious balance when combined with the grilled meat or chicken inside. It can usually contain ingredients such as doner meat or chicken or bolied egg or feta cheese, lettuce, tomato, onion and yoghurt-based sauces.
Here it is our delicious Gobit Pita Bread's recipe;
Serve: 15 gobit pita breads, Preparation Time: 30 minutes, Cooking Time: 7 or 8 minutes, Cuisine: Mediterranean / Anatolian Cuisines,
Very good family favourite;
Ingredients: 1 Cup lukewarm milk, |
Ingredients: 1 Tablespoon granulated sugar, |
Ingredients: 1 Tablespoon dry yeast, |
Ingredients: 2 or 3 Tablespoons olive oil, |
Ingredients: 1/2 cup yogurt, |
Ingredients: 1/2 cup water, |
Ingredients: 1/2 or 1 Teaspoon salt, |
Ingredients: a pinch of black cumin for each gobit pita bread, |
Ingredients: 5 or 6 Cups all porpuse flour, |
Utensils: A baking pan and enough size of parchment paper for the baking pan, |
Firstly prepare the lukewarm milk, |
Then in a big bowl add milk, |
And sprinkle dry yeast and sugar over it, |
Then let it stand for about 5-6 minutes until yeast is activated, |
Then add olive oil and water, |
And add yogurt and mix all of them, |
Then add 5 cups of flour and salt and begin to knead, knead adding more flour if needed until you have smooth, soft and somewhat sticky dough, |
Then cover and let it rise until doubled for about 40-45 mins, |
Then transfer the dough into a floured surface and make a log and cut into 12-15 pieces, |
Then shape the pieces into rounds and cover it with a damp cloth, |
Then roll out each dough with a rolling pin sprinkling flour to prevent sticking to about 22-24cm (8,8,66 - 9,84 inch) in diameter and little more than 0,0,5 cm (0,19 inch) thick, |
And sprinkle a pinch of black cumin over the each of Gobit Pita Bread, |
Then place onto a baking tray that is covered with baking paper. Place 6 dough on each tray, |
Then cook the gobit pitas one sheet at a time in preheated 230°C (446°F) degree oven until they puff up and have a light golden color for about 7-8 mins, |
Putting a cup of water in the oven while baking breads keeps the bread dough from drying out, |

You can use this rich gobit pita bread with many fillings. |
- 1 Cup lukewarm milk,
- 1 Tablespoon granulated sugar,
- 1 Tablespoon dry yeast,
- 2 or 3 Tablespoons olive oil,
- 1/2 Cup yogurt,
- 1/2 Cup water,
- 1/2 or 1 Teaspoon salt,
- A pinch of black cumin for each gobit pita bread,
- 5 or 6 Cups all porpuse flour, (don’t add the final half cup before kneading. Add gradually to make a soft somewhat sticky dough)
Utensils:
- A baking pan,
- Enough size of parchment paper for the baking pan,
Preparation:
- First of all, put your all ingredients on the work table. Then, prepare lukewarm (not hot) milk first and then in a big bowl add milk, sprinkle dry yeast and sugar over it and let it stand for about 5-6 minutes until yeast is activated.
- Then, add yogurt, water, olive oil, 5 cups flour and salt and begin to knead. Knead adding more flour if needed until you have smooth, soft, and somewhat sticky dough. Cover and let it rise until doubled for about 40 - 45 minutes.
- Then, transfer the dough into a floured surface. Make a log and cut it into 12 - 15 pieces. Then shape the pieces into rounds and cover it with a damp cloth.

- Cover the baked gobit pita bread with damp clothes to soften.
- Classic Sandwich with Gobit pita bread: You can use this rich gobit pita bread with many fillings. You can quickly make a cheese sandwich with what you have on hand: Added lettuce leave, sliced tomato and cucumber, cheddar cheese (white cheese would go well too), and green pepper. Enjoy it with Turkish hot tea or Ayran drink!
