Recipe of Ashura (Noah's Pudding)
Ingredients:
- 2 Cups Wheat,
- 1/2 Cup Rice,
- 1/2 Cup White beans (Navy beans),
- 1/2 Cup Garbanzo beans (Chick peas),
- 1/2 Cup Almonds,
- 1/2 Cup Peanuts,
- 1/2 Cup Raisins (Sultana raisins)
- 5 Dried Figs and Apricots (cut into small pieces)
- 2 Cups Sugar,
- Topping: 1 cup Walnut (chopped very small pieces), 1 cup Hazelnuts (chopped very small pieces), Cinemon, Coconut powder, Pomegranate.
Preparation
Wash and place Wheat, Rice, White beans, Garbanzo beans in a large pot and fill it with water and soak them overnight. Next day place the pot on medium heat and boil Wheat, Rice, White beans, Garbanzo beans for one hours then reduce heat and boil another two hours or until all the grains are very soft (Remove the outer shell or skin). Soak the Raisins (sultana raisins) in boiling water until they soften, then put all the ingredients in a large pot and boil, then add Peanuts and Almonds (peeled and cut in half) at this moment chop the Apricots and Figs into small pieces and add the mixture. Then add the 2 Cups Sugar into mixture. Boil another half hour or forty minutes. Then pour into single serving individual glass or Porcelain bowls. Then, top each individual bowl with the Hazelnuts, Walnut and Pomegranate then sprinkle the coconut powder and cinemon. This pudding should keep well in the refrigerator and should be served cold.
